Why We Choose Heritage Poultry

Fall is finally here, bringing cooler temperatures that we all welcome. As the days shorten after the summer solstice, our Sussex hens, White Holland turkeys, Saxony ducks, and Welsh Harlequin ducks naturally start laying fewer eggs. It's important to note that heritage eggs are indeed seasonal! You might be wondering how grocery stores manage to have a year-round supply of eggs. Those come from commercial breeds of chickens that lay eggs throughout the year but live much shorter lives. While we could artificially extend our egg season by adding light to the coops, we choose not to compromise our principles and ethics in this way. Now, you may be wondering, why do we raise heritage poultry if they lay fewer eggs? The answer is simple yet profound. Heritage-breed poultry is slow-growing and enjoys long, productive lives. This aligns perfectly with our hatch-to-harvest program, making it practical for us to raise heritage poultry. Moreover, we find that slow-growth birds offer a superior taste and texture, which we prefer.

We sold out of our heritage chicken and duck quickly in June, and we didn’t even have time to add them to our website store. But I have eggs in the incubator for the spring 2025 harvest.
